El Kantara is situated in the Biskra region, which is the Sahara Gate of Algeria. It provides an ideal climate for olive cultivation due to mild winters, long hot summers, and moderate wind.

The oil is obtained directly from olives using solely mechanical means. Olives are harvested with care using traditional methods and pressed within hours of being picked. The extraction process is cold, without the use of heat or chemicals, ensuring that the flavor and nutritional properties of the olives are preserved. The oil is high in Monounsaturated fats.

It is a robust oil with medium fruitiness and a light to medium pungency. The flavor is full-bodied and herbaceous, with a pleasant peppery aftertaste.
